Washed-rind cheeses are soft in character and ripen inwards like those with white moulds, but are periodically cured in a solution of brine and/or mould-bearing agents that may include beer, wine, brandy, and spices, making their distinctive bright orange and flavourful rinds. Beneath the rind, the cheese matures into a wonderful silky-smooth interior with a sweet, creamy flavour more subtle than the rind itself.

The 2010 vintage is the first 'Iperico' from Valentina Cubi that has been produced with organic certified grapes. Ruby red colour with vibrant garnet edges. Pleasant intensity of fruity aromas on the nose, predominantly red berries and spice. Fresh and easy drinking, with ripe red berry characters and vanilla undertones. Medium bodied yet full flavoured, very fine on the palate with hints of spices and a long finish.
