All About…Sous Vide Cooking Sous vide cooking was developed in France in the 1970s. The term sous vide translates from French as ‘under vacuum.’ This method of cooking involves vacuum sealing the food in plastic pouches, then cooking the pouch in a water bath for long periods of time. The sealing of the food prevents it from losing flavour and moisture as it would with conventional cooking methods (eg. grilling, pan-frying). This cooking technique is great for dinner parties. Food can be prepared a few days in advance, leaving you more time to spend with your guests. But enough about the science, you must see this to believe it!
